Kimchi is the Korean food. You ferment Chinese cabbage with chili powder to create Kimchi. At least that is the most popular variation. There are tons of different types using different vegetables and some even leave out the chili powder. Kimchi is spicy, but most Koreans explain it as a “refreshing” feeling.
Kimchi can be found at every restaurant for free and it is eaten every single meal. Most of the time it is served as a side dish and is not part of the main meal. However, there are a ton of dishes that incorporate kimchi directly. There is Kimchi fried rice, Kimchi soup, Kimchi pancakes, and much more. It is also combined with Western food to create new dishes like Kimchi fries. If you are in Korea, expect to eat A LOT of Kimchi.
